Why not just open up the hard drive, connect it via sata to your PC, and do the transfer with PC software? There are multiple programs that can read, write, and backup 360 formatted drives.

1) Acquire flash drive
2) Insert into 360
3) Format as 360 memory card
4) Insert old HDD
5) Transfer as much as possible to flash drive
6) Swap in new HDD
7) Move from flash drive to new HDD
8) Repeat steps 4-7 until all data is moved
