So whenever I press up on the C - stick, it decides that that ALSO means that either the L or R button is slightly pressed down. Anyone know what could be causing this?
It's not the sliders. Those have been taken off of the controller board. It's that the signal from the Y axis of the C-stick is also doing something with the L/R (probably R; the traces are closer) button or..something.

Hey Jidan. Its probably a wiring issue. The L/R traces are very close to the C stick traces and in some cases intertwine. You only need 4 wires plus ground for the C stick, so make sure those 4 wires are going to the right spot.
I would put L and R back on because they do weird things when they are disconnected making troubleshooting for the c stick difficult. Use the startup menu to make sure the C stick works (up,down, left, right). If it does work, then L and R simply need to be reconnected. Hope that helps
The C-stick all works fine. I tested it on Super Smash Brothers in the menu screen and it worked for rotating the menu. I then tried it in the game and it would work, but it would also press one of the shoulders.
I'll try and reconnect them and see what happens, though. Thanks; I'll update here.
