Adjustin' mah Diets...

Recently, I decided to switch to a less inefficient(read: aminal focused, highly processed, or out of season) diet... However, I'm having a tough time coming up with new things to cook. Does anyone have tips on what to look for or simplish recipes they'd like to share?

I've basically been making quesadillias with whatever random veggie I have to throw at them. I need something that isn't based on cheese, meat, or pretending to be meat.
 
Eggs don't count as meat, and you can practically live off of egg whites.

Steak, Singles Cheese Slices, and Corn in a Can.

Eggs are still hilariously inefficient to farm. It's not so much the meat thing. I like meat, meat is great. I just don't want to be living off of mostly meat things and then a couple more things. I'd rather mostly other things and occasionally a meat thing.
 
Responisbly caught fish? don't bother with the farmed stuff, just as inefficently farmed as most meat.

Or buy a gun and hunt your own meat?
 
Sadly, I live a bit too far inland for fish and the lakes and rivers around here are all overfished and have a ton of mercury... I'm about as far inland as Great Britain is tall... Fish don't get on the menu much. :(

Logistically speaking, yes, it's all about the same inefficiency, but the actual growing part of it is different.
