Battery requirements for Wii?

Should I just follow what the power chord says? I know it's 12 volts at 3.7 Amps, so 3700 mAH. Does that mean I just need a 12v 3700 mAH battery? I also have a 12v screen hooked up so I'd want more mAH to increase battery life right?

No.
I believe that you need at least 12 volts to run the Wii, but I have no clue about the Wii's regulators and voltages.
As for the mAh, that tells you how much power is in the battery. Divide it by the milliamp draw of what ever is running off of it to get what will be your battery life (in an ideal world).

Well 12v is all the power chord supplies, so I'm not sure how that works. I've read that it can actually run on 10-11v but needs 12v to power up, if that's what you meant.
