question av cables internal makeup

I have stripped an av cable for some test wording, there was an in insulated copper wire around another layer of yellow insulation that contained another copper wire, this was the composite (red,white,yellow,) video wire if it makes a difference. I assume that one is data and one is ground, but I am inexperienced in such things, would anyone be able to identify the two wires

You are correct. The shielding copper wire is a ground, and the internal, insulated one carries the signal. I recently learned this myself trying to hook up composite video to a wii screen.
