How about I just tell you how to wire all of that? What is it you're not understanding about wiring the screen and controller?

Wire the screen like this:

I see you've trimmed your board so you're going to need to pull audio and video from some capacitors. Be sure to solder to the negative sides of the capacitors. The negative side is marked black.
Composite = Rev 3-5 C15 Rev 6-9 C16
R Audio = C26
L Audio = C25

Be sure to connect your grounds.

As for the controllers just trace the connections from the original solder points and you'll  see some test pads, or just the components depending on how far back you've trimmed the board. Just solder the controller connections to those points and then ground it.
