what is the best audio amp that you can make with the least hassle and work... with volume control? this has probably been asked before but i really dont care.

For mono audio, the LM386 is decent. There are different schematics for it but I recommend the one on Rekarp's site.
I don't have much experience with stereo amps but the TPA6021A4 from TI is amazing. It requires a ton of caps but it really is great quality. Also, Mario found a small stereo amp that may be worth trying, the TDA2822. It can do mono also and can run on voltages as low as 1.8v!

And about volume control: even if it isn't visible in the schematic, volume control can be added by connecting a pot to audio in.
