All these different color cables?

I'm confused as to whether we need color cables or not. Here is an example of color cables:

I was wondering, are the cables simply for simplicity of color coding what each thing can do in the motherboard and vice versa. Or does each cable out put a certain Ampere from solder to solder? What i mean is, could i simply according to the picture trade all the cables that are not (Black, YELLOW,WHITE) into red cables? or must i have them all color coded? Also what type of wiring should i purchase. Also could someone help me identify the needs of different color wiring or they're purpose? I find this very basic step but its just a step that for some reason i cant grasp !

Color Coding is for your convenience. You can have every single wire pink except for one that is fuchsia for all they care, it won't make a difference.

This is why you see people recommend using IDE cables. You get 40 identical lengths of wires that are already grouped together and whatnot. It's fantastic.

Okay so I could pretty much use whoever color. So when deciding what type of wire I should buy (once I run out), what should I specifically look for in a wire? Gauge? Watts? Amp? Etc!

Also for my clarification, and something a bit of topic, I soldered a wire (red power) to a pcb, but the diagram shows another wire into the same pcb hole! The whole is tiny therefore the gauge of the wires won't fit simultaneously. Can I simply solder one of the red leads into the other red lead? From my text book, I seem to assume that solder pretty much connects 2 metals so that current can pass through easily. Will that still work or would I have to buy smaller gauge wire so that they both fit into the pcb hole (PTH8080WAH for my Portable N64)!
