You'd need to either 1) Get a composite-to-VGA encoder, which is a bit pricy and won't look good, or
2) replace the NES PPU with an RP2C03B from an old playchoice or VS board so it can output RGB, then get a line doubler so it'll sync to standard 30khz h-sync VGA. If you are lucky, your monitor may just take the native 15khz sync, but that is unlikely.
both solutions are expensive. #1 is cheaper, but worse and possibly laggy. #2 is super expensive but will look decent.
