Ok, so I have an NES and have slimmed it down and have the RFU and was wondering if I can use anything on this in order to make a portable and be able to have the video work. What, if anything, can I take and use?

here's a pic

Get a 4-in-1 wireless controller to use with your xbox or GC maybe that PS2 or maybe a bluetooth dongle for only 1.80USD

GCp Progress (Key: X=Done, -=in progress, 0=not started)
[X]Open Gamcube
[0]Open LCD Screen
[0]Make contacts
[-]Open GC controller
[0]Rearrange buttons
[0]Put together a case
[0]Put everything inside and seal up

Desolder everything and keep it- might be useful for future projects. The parts that could be used for NES are the capacitors and 7805 on the lower left for the power supply, and some of the video circuitry might be reusable. I recommend you just build that from scratch, though.
