S-Video vs. Composite?

Is there a huge difference between the two? Is there some sort of comparison picture?

It can vary on system to system but I tried to tell on the n64 with multiple games, and I couldn't tell the difference between them unless I looked at them both at the same time. Some games I didn't even notice when the pictures were next to each other.
 
S-video is vastly superior to composite, in theory anyway. In reality it's better but not hugely better.
 
S-video is generally much higher quality since the sync lines are seperate. however, on older systems, it often doesnt make a difference.
 
Sooooo, would it be possible to do an S-video instead of a Composite mod from my SNES to screen (in my portable)?
 
Mini SNES? Needs modding, it's relatively simple. There's a diagram on the Wiki if it's still up. PSone screen? No s-video input.

However, the mini SNES can be modded for RGB, and that's even better. The PSone screen does take RGB.
